- 2 medium zucchinis (spiralized into noodles)
- 1 pint cherry tomatoes (halved)
- 8 oz fresh mozzarella (bocconcini or ciliegine, halved)
- 1/4 cup fresh basil leaves (chopped)
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp balsamic glaze
- Salt and pepper to taste
Instructions
- Spiralize the zucchinis into noodles and place them in a large bowl.
- Halve the cherry tomatoes and add them to the bowl with the zucchini noodles.
- Cut the fresh mozzarella into halves and add them to the salad.
- Add the chopped basil leaves to the bowl and mix everything gently.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss everything together.
- Finish the salad by drizzling balsamic glaze on top before serving.
Notes
- For a vegan version, substitute fresh mozzarella with vegan mozzarella.
- For extra flavor, add a sprinkle of red pepper flakes.
- This salad is best served immediately for optimal freshness, but can be stored in the fridge for a few hours.
