Description

Caprese Pasta Salad is a fresh and colorful dish combining cherry tomatoes, mozzarella balls, and basil with pasta in a balsamic vinaigrette. Perfect for picnics or light meals.


Ingredients

  • 12 oz pasta (such as rotini or penne)
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved
  • 1/2 cup fresh basil leaves, torn
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt to taste
  • Black pepper to taste
  • 1 clove garlic, minced (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and allow it to cool.
  2. Halve the cherry tomatoes and mozzarella balls.
  3. In a large bowl, combine the cooled pasta, tomatoes, mozzarella, and torn basil leaves.
  4. In a small bowl or jar, whisk together olive oil, balsamic vinegar, salt, pepper, and minced garlic if using.
  5. Pour the dressing over the pasta mixture and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
