- 9 cups Rice Chex cereal
- 1 1/2 cups white chocolate chips
- 1 tablespoon vegetable oil (or coconut oil for flavor)
- 1/2 teaspoon peppermint extract
- 1 cup crushed candy canes
- 1 1/2 cups powdered sugar
Instructions
- Place the Rice Chex cereal in a large mixing bowl and set aside.
- In a microwave-safe bowl, combine the white chocolate chips and oil. Microwave in 30-second intervals, stirring each time, until melted and smooth.
- Stir in the peppermint extract.
- Pour the melted mixture over the cereal and fold gently until evenly coated.
- Add the crushed candy canes and mix well.
- Place the powdered sugar in a large zip-top bag. Add the coated cereal and shake until well covered.
- Spread the mixture on a parchment-lined baking sheet to cool and set completely.
- Store in an airtight container or serve.
