Description

These buttery steak bites with garlic herb potatoes are a quick and hearty dinner idea. Juicy, tender steak pieces are seared to perfection and paired with golden, crispy potatoes tossed in garlic and herbs. It’s a one-pan meal full of flavor and ready in under 30 minutes!


Ingredients

For the Garlic Herb Potatoes:

  • 1 lb baby potatoes, halved

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp dried parsley

  • 1/2 tsp dried thyme

  • Salt and black pepper to taste

For the Butter Steak Bites:

  • 1 lb sirloin steak, cut into 1-inch cubes

  • Salt and black pepper to taste

  • 2 tbsp olive oil (for searing)

  • 3 tbsp unsalted butter

  • 4 garlic cloves, minced

  • 1 tbsp fresh parsley, chopped


Instructions

  1. Cook the potatoes:
    In a large skillet over medium heat, heat olive oil. Add halved potatoes cut-side down. Season with garlic powder, dried parsley, thyme, salt, and pepper. Cook for about 10–12 minutes, stirring occasionally, until golden and fork-tender. Remove from skillet and set aside.

  2. Sear the steak:
    Season steak bites with salt and pepper. In the same skillet, heat olive oil over high heat. Add steak in a single layer and sear for 2–3 minutes per side until browned and cooked to your liking. Do this in batches if needed to avoid overcrowding the pan.

  3. Add the garlic butter:
    Reduce heat to medium. Add butter and minced garlic to the skillet. Let the garlic cook for about 1 minute until fragrant. Return the steak and potatoes to the pan and toss everything together until coated in the garlic butter.

  4. Garnish and serve:
    Sprinkle with fresh chopped parsley. Serve immediately.


Notes

  • You can use any cut of steak, but sirloin or ribeye works best for tenderness.

  • Don’t overcrowd the pan when searing steak or the meat won’t brown properly.

  • Add red chili flakes for a spicy kick if you’d like.
