Description

Ingredients

  • 2 cups buttercream or cream cheese frosting
  • 12 cups shredded coconut (optional, tinted green)
  • 12 large marshmallows (cut in half for feet)
  • 12 mini marshmallows (for tails)
  • 2 tbsp pink sanding sugar or pink frosting
  • 24 white chocolate chips or candy melts (optional, for paw pads)
  • Green food coloring (optional, for coconut grass)

Instructions

  1. Bake cupcakes according to your favorite recipe and let cool completely.
  2. If using coconut grass, tint shredded coconut green by tossing it with a few drops of green food coloring.
  3. Generously frost each cupcake with buttercream or cream cheese frosting.
  4. Sprinkle tops with green coconut to resemble grass.
  5. Cut each large marshmallow in half to create bunny feet.
  6. Decorate the feet by adding paw pads using pink sanding sugar, pink frosting, or melted white chocolate.
  7. Attach a mini marshmallow to each cupcake for the bunny tail, pressing gently into the frosting.
  8. Position the marshmallow feet at an angle so they look like the bunny is diving in.
