Description

These crispy Buffalo Chicken Taquitos are packed with shredded chicken, spicy buffalo sauce, and creamy cheese, all rolled up in a warm tortilla and baked to golden perfection. They’re perfect for game day, a quick dinner, or an easy party appetizer!


Ingredients

  • 2 cups cooked shredded chicken (rotisserie works great)

  • 1/2 cup buffalo wing sauce (like Frank’s RedHot)

  • 4 oz cream cheese, softened

  • 1 cup shredded cheddar cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 10 small flour or corn tortillas

  • Cooking spray or olive oil (for brushing)

  • Optional: chopped green onions or ranch for serving


Instructions

  1. Preheat your oven to 425°F (220°C).

  2. In a large bowl, mix together shredded chicken, buffalo sauce, cream cheese, cheddar cheese, garlic powder, and onion powder until well combined.

  3. Warm the tortillas slightly in the microwave (about 20 seconds) to make them easier to roll.

  4. Place about 2 tablespoons of filling onto the bottom third of each tortilla, then roll tightly.

  5. Place rolled taquitos seam-side down on a baking sheet lined with parchment paper.

  6. Lightly spray or brush the tops with cooking spray or olive oil for a crispier finish.

  7. Bake for 15–18 minutes, or until golden and crispy.

  8. Serve hot with ranch, blue cheese dressing, or extra buffalo sauce on the side.


Notes

  • Use corn tortillas for a gluten-free option.

  • You can prep these ahead of time and freeze before baking — just add a few extra minutes in the oven when baking from frozen.

 

  • Great with a side of celery sticks or a simple salad.
