Instructions

- Fold in the shredded chicken, cheddar cheese, blue cheese (if using), and green onions until well combined.
- Spread the mixture evenly over each tortilla, leaving a small border around the edges.
- Roll each tortilla tightly into a log, then wrap in plastic wrap and refrigerate for at least 1 hour to firm up.
- Unwrap and slice each roll into 1-inch pinwheels.
- Arrange on a platter and serve chilled or at room temperature.
