Description

Buckeye Pie is a rich and decadent dessert that combines the classic flavors of chocolate and peanut butter, inspired by the popular Buckeye candies. It’s a no-bake treat perfect for chocolate lovers.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 cups semi-sweet chocolate chips
  • 3/4 cup heavy cream (for ganache)
  • Pinch of salt

Instructions

  1. In a bowl, mix chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Refrigerate for 20 minutes to set.
  2. In a large mixing bowl, beat together the peanut butter, cream cheese, powdered sugar, vanilla extract, and a pinch of salt until smooth and creamy.
  3. In a separate bowl, whip 1 1/2 cups of heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.
  4. Spoon the peanut butter filling into the chilled crust and smooth the top. Refrigerate for at least 1 hour.
  5. To make the ganache, heat 3/4 cup of heavy cream until just simmering, then pour over the chocolate chips in a bowl. Let sit for a minute, then stir until smooth.
  6. Pour the ganache over the peanut butter layer and spread evenly. Refrigerate the pie for another 1-2 hours or until fully set.
  7. Slice and serve chilled. Optionally, garnish with mini chocolate chips or chopped peanuts.

Notes

  • Use a springform pan for easier slicing and serving.
  • You can use Oreo cookies for the crust for added flavor.
  • The pie can be made a day in advance and stored in the refrigerator.
