Ingredients
Dates:
1 cup pitted Medjool dates;
Almond Butter:
1/2 cup almond butter;
Cocoa Powder:
1/4 cup cocoa powder;
Chocolate Protein Powder:
1/2 cup chocolate protein powder;
Vanilla Extract:
1 teaspoon vanilla extract;
Salt:
pinch of salt;
Water:
2–3 tablespoons water, as needed;
Mini Chocolate Chips:
1/4 cup mini chocolate chips (optional).
Instructions
- Prepare Date Mixture: In a food processor, blend the dates until finely chopped and sticky.
- Add Ingredients: Add almond butter, cocoa powder, protein powder, vanilla extract, and salt. Process until the mixture forms a crumbly dough.
- Adjust Consistency: Add water 1 tablespoon at a time until the mixture holds together when pressed. If desired, pulse in the mini chocolate chips.
- Shape and Chill: Roll the mixture into 1-inch balls and place them on a parchment-lined tray. Refrigerate for at least 30 minutes to firm up.
- Storage: Store the Brownie Protein Bites in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
