Description

Ingredients

  • 2 cups fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Olive oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Blanch the broccoli in boiling water for 2-3 minutes until tender, then drain and chop finely.
  3. In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, mayonnaise, garlic powder, onion powder, salt, pepper, and red pepper flakes (if using).
  4. Mix until the mixture holds together when pressed. Form into 1-inch balls and place them on the prepared baking sheet.
  5. Optionally, spray the balls with a little olive oil for extra crispiness.
  6. Bake for 18-20 minutes, flipping halfway through, until the balls are golden brown and crispy on the outside.
  7. Serve warm with dipping sauce or enjoy as they are!

  • For a healthier version, you can bake the cheese balls instead of frying them.
