- 2 cups fresh broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and freshly ground black pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
- Olive oil for frying
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Blanch the broccoli in boiling water for 2-3 minutes until tender, then drain and chop finely.
- In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, mayonnaise, garlic powder, onion powder, salt, pepper, and red pepper flakes (if using).
- Mix until the mixture holds together when pressed. Form into 1-inch balls and place them on the prepared baking sheet.
- Optionally, spray the balls with a little olive oil for extra crispiness.
- Bake for 18-20 minutes, flipping halfway through, until the balls are golden brown and crispy on the outside.
- Serve warm with dipping sauce or enjoy as they are!

- For a healthier version, you can bake the cheese balls instead of frying them.
- If you prefer a different cheese, feel free to substitute the cheddar with mozzarella or gouda.
