Description

Ingredients

  • 8 oz elbow macaroni
  • 2 cups broccoli florets
  • 2 cups cooked chicken, shredded or cubed
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 teaspoon paprika (optional)
  • 1 tablespoon olive oil (for cooking chicken, if not pre-cooked)

Instructions

  1. Cook macaroni according to package directions; add broccoli in the last 2 minutes of cooking. Drain and set aside.
  2. If using raw chicken, cook in olive oil over medium heat until fully cooked, then cube or shred.
  3. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until bubbly.
  4. Gradually whisk in milk and cream. Cook, stirring constantly, until the mixture thickens, about 5-7 minutes.
  5. Stir in garlic powder, onion powder, salt, pepper, and paprika (if using).
  6. Add cheddar cheese and stir until melted and smooth.
  7. Add cooked pasta, broccoli, and chicken to the cheese sauce. Stir to coat everything evenly.
  8. Cook for an additional 2-3 minutes to heat through. Serve warm.

  • Use rotisserie chicken for a quick shortcut.
  • You can substitute frozen broccoli; just thaw and drain well.
  • Try mixing in a bit of Dijon mustard for added depth of flavor.
