- 8 oz elbow macaroni
- 2 cups broccoli florets
- 2 cups cooked chicken, shredded or cubed
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 teaspoon paprika (optional)
- 1 tablespoon olive oil (for cooking chicken, if not pre-cooked)
Instructions
- Cook macaroni according to package directions; add broccoli in the last 2 minutes of cooking. Drain and set aside.
- If using raw chicken, cook in olive oil over medium heat until fully cooked, then cube or shred.
- In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until bubbly.
- Gradually whisk in milk and cream. Cook, stirring constantly, until the mixture thickens, about 5-7 minutes.
- Stir in garlic powder, onion powder, salt, pepper, and paprika (if using).
- Add cheddar cheese and stir until melted and smooth.
- Add cooked pasta, broccoli, and chicken to the cheese sauce. Stir to coat everything evenly.
- Cook for an additional 2-3 minutes to heat through. Serve warm.
Notes
- Use rotisserie chicken for a quick shortcut.
- You can substitute frozen broccoli; just thaw and drain well.
- Try mixing in a bit of Dijon mustard for added depth of flavor.
