Description

Breakfast Taquitos are a crispy and portable morning meal packed with eggs, cheese, and savory breakfast meats, perfect for busy mornings or meal prep.


Ingredients

  • 8 small tortillas (flour or corn)
  • 6 large eggs
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1/2 pound breakfast sausage or 6 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: 1/4 cup diced bell peppers
  • Optional: 1/4 cup diced onions
  • Optional: 1 small jalapeño, diced
  • Optional: 1/2 cup spinach, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, cook sausage or bacon until browned and crispy. Drain on paper towels.
  3. In a bowl, whisk eggs, milk, salt, and pepper together.
  4. Add butter to the skillet and scramble the egg mixture over medium heat until just set.
  5. Stir in the cooked meat and any optional vegetables.
  6. Warm tortillas to make them pliable. Fill each with the egg mixture and shredded cheese.
  7. Roll tightly and place seam-side down on the baking sheet.
  8. Lightly spray or brush the tops with oil.
  9. Bake for 15-20 minutes until golden and crispy.
