- 8 small tortillas (flour or corn)
- 6 large eggs
- 1/4 cup milk
- 1 tablespoon butter
- 1/2 pound breakfast sausage or 6 slices of bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional: 1/4 cup diced bell peppers
- Optional: 1/4 cup diced onions
- Optional: 1 small jalapeño, diced
- Optional: 1/2 cup spinach, chopped
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, cook sausage or bacon until browned and crispy. Drain on paper towels.
- In a bowl, whisk eggs, milk, salt, and pepper together.
- Add butter to the skillet and scramble the egg mixture over medium heat until just set.
- Stir in the cooked meat and any optional vegetables.
- Warm tortillas to make them pliable. Fill each with the egg mixture and shredded cheese.
- Roll tightly and place seam-side down on the baking sheet.
- Lightly spray or brush the tops with oil.
- Bake for 15-20 minutes until golden and crispy.
