Ingredients
- 2 cups fresh blueberries
- 2 peaches, sliced
- 4 oz feta cheese, crumbled
- 4 cups mixed greens (arugula, spinach, or a blend)
- 1/4 cup red onion, thinly sliced
- 1/4 cup pecans, toasted (optional)
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon lime juice
- Salt and freshly ground black pepper, to taste
Instructions
- In a small bowl, whisk together olive oil, honey, lime juice, salt, and pepper to create the dressing.
- In a large bowl, combine the mixed greens, blueberries, peach slices, red onion, and feta cheese.
