Wet Ingredients:
- 1/4 cup unsalted butter, melted
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
Additional Ingredients:
- 1 1/2 cups fresh or frozen blueberries
- 1 tablespoon flour (to coat blueberries)
- 1 tablespoon honey or maple syrup (optional, for added sweetness)
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
- Mix Dry Ingredients: In a large bowl, combine oats, flour, brown sugar, cinnamon, salt, and baking powder.
- Prepare Wet Mixture: In a separate bowl, mix melted butter, applesauce, egg, and vanilla extract.
- Combine Ingredients: Add wet mixture to dry ingredients, stirring until well mixed.
- Add Blueberries: Coat blueberries with flour, then gently fold into the batter. Optionally, add honey or maple syrup.
- Bake: Spread batter in the pan and bake for 25–30 minutes until golden and set.
- Cool and Slice: Allow to cool in the pan before cutting into bars.
