Wet Ingredients:

  • 1 large egg
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 1/2 cups fresh or frozen blueberries
  • 1 tablespoon flour (to coat blueberries)
  • 1 tablespoon honey or maple syrup (optional, for added sweetness)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  2. Mix Dry Ingredients: In a large bowl, combine oats, flour, brown sugar, cinnamon, salt, and baking powder.
  3. Prepare Wet Mixture: In a separate bowl, mix melted butter, applesauce, egg, and vanilla extract.
  4. Combine Ingredients: Add wet mixture to dry ingredients, stirring until well mixed.
  5. Add Blueberries: Coat blueberries with flour, then gently fold into the batter. Optionally, add honey or maple syrup.
  6. Bake: Spread batter in the pan and bake for 25–30 minutes until golden and set.
