- 1 cup granulated sugar
- 1 teaspoon baking powder
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups fresh or frozen blueberries
- 1/2 cup granulated sugar (for filling)
- 2 teaspoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish or line with parchment paper.
- In a large bowl, mix 1 cup sugar, baking powder, flour, and salt. Cut in the butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Stir in egg and vanilla extract until the dough is crumbly but holds together when pressed.
- Press half of the dough into the bottom of the prepared pan to form the crust.
- In another bowl, mix the blueberries with 1/2 cup sugar, cornstarch, lemon juice, and lemon zest.
- Spread the blueberry mixture evenly over the crust.
- Sprinkle the remaining crumb mixture over the blueberries.
- Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
- Cool completely before cutting into bars.
Notes
- Use frozen blueberries if fresh aren’t available—no need to thaw.
- Add chopped nuts to the topping for a crunchy texture.
- Store bars in the fridge for up to 5 days, or freeze for longer storage.
