Description

Blueberry Crumb Bars are a delightful dessert featuring a buttery crumb crust and topping with a sweet and tangy blueberry filling, perfect for summer gatherings or as a snack.


Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar (for filling)
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish or line with parchment paper.
  2. In a large bowl, mix 1 cup sugar, baking powder, flour, and salt. Cut in the butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Stir in egg and vanilla extract until the dough is crumbly but holds together when pressed.
  4. Press half of the dough into the bottom of the prepared pan to form the crust.
  5. In another bowl, mix the blueberries with 1/2 cup sugar, cornstarch, lemon juice, and lemon zest.
  6. Spread the blueberry mixture evenly over the crust.
  7. Sprinkle the remaining crumb mixture over the blueberries.
  8. Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
  9. Cool completely before cutting into bars.

Notes

  • Use frozen blueberries if fresh aren’t available—no need to thaw.
  • Add chopped nuts to the topping for a crunchy texture.
  • Store bars in the fridge for up to 5 days, or freeze for longer storage.
