Description
This BLT Pasta Salad combines the classic flavors of a BLT sandwich with tender pasta, crispy bacon, juicy tomatoes, and crunchy lettuce in a creamy dressing. Perfect for picnics, potlucks, or an easy meal.

- 12 oz rotini or penne pasta
- 8 slices bacon
- 2 cups chopped romaine or iceberg lettuce
- 1 1/2 cups diced tomatoes
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 2 tbsp chopped chives (optional)
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- While the pasta cooks, fry the bacon until crispy. Drain on paper towels and chop into bite-sized pieces.
- In a large bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper to make the dressing.
- Add the cooled pasta, chopped bacon, diced tomatoes, and lettuce to the bowl. Gently toss to coat everything evenly with the dressing.
- Sprinkle with chopped chives if using. Chill for at least 30 minutes before serving for the best flavor.
