Description

This BLT Pasta Salad combines the classic flavors of a BLT sandwich with tender pasta, crispy bacon, juicy tomatoes, and crunchy lettuce in a creamy dressing. Perfect for picnics, potlucks, or an easy meal.


Ingredients

  • 12 oz rotini or penne pasta
  • 8 slices bacon
  • 2 cups chopped romaine or iceberg lettuce
  • 1 1/2 cups diced tomatoes
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp chopped chives (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  2. While the pasta cooks, fry the bacon until crispy. Drain on paper towels and chop into bite-sized pieces.
  3. In a large bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper to make the dressing.
  4. Add the cooled pasta, chopped bacon, diced tomatoes, and lettuce to the bowl. Gently toss to coat everything evenly with the dressing.
  5. Sprinkle with chopped chives if using. Chill for at least 30 minutes before serving for the best flavor.

  • Use turkey bacon for a lighter version.
