Description

A classic Southern comfort breakfast dish featuring flaky homemade biscuits smothered in rich, creamy sausage gravy.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 1/2 cups whole milk
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

  1. Preheat the oven to 425°F (220°C). In a large bowl, combine flour, baking powder, baking soda, and salt.
  2. Cut in the cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Add buttermilk and stir just until dough comes together. Do not overmix.
  4. Turn dough onto a floured surface, gently pat into a 1-inch thick rectangle, and fold it over a few times. Pat out again and cut into biscuits.
  5. Place biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
  6. While biscuits are baking, cook sausage in a skillet over medium heat until browned and cooked through. Do not drain the fat.
  7. Sprinkle flour over sausage, stir to coat, and cook for 1-2 minutes.
  8. Gradually whisk in milk and bring to a simmer. Cook until thickened, about 5-7 minutes. Season with pepper and salt to taste.
  9. Split biscuits and pour sausage gravy over the top. Serve immediately.

Notes

  • Use very cold butter for flakier biscuits.
  • You can add a pinch of cayenne pepper to the gravy for a little heat.
  • Gravy can be made ahead and reheated gently on the stove with a splash of milk.
