- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour (for gravy)
- 2 1/2 cups whole milk
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Preheat the oven to 425°F (220°C). In a large bowl, combine flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- Add buttermilk and stir just until dough comes together. Do not overmix.
- Turn dough onto a floured surface, gently pat into a 1-inch thick rectangle, and fold it over a few times. Pat out again and cut into biscuits.
- Place biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
- While biscuits are baking, cook sausage in a skillet over medium heat until browned and cooked through. Do not drain the fat.
- Sprinkle flour over sausage, stir to coat, and cook for 1-2 minutes.
- Gradually whisk in milk and bring to a simmer. Cook until thickened, about 5-7 minutes. Season with pepper and salt to taste.
- Split biscuits and pour sausage gravy over the top. Serve immediately.
Notes
- Use very cold butter for flakier biscuits.
- You can add a pinch of cayenne pepper to the gravy for a little heat.
- Gravy can be made ahead and reheated gently on the stove with a splash of milk.
