Description

A hearty and comforting Portuguese Kale Soup, traditionally known as Caldo Verde, made with kale, potatoes, sausage, and a flavorful broth, with creative twists for added variety.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 4 medium potatoes, peeled and diced
  • 1 bay leaf
  • 8 oz chorizo or linguiça sausage, sliced
  • 4 cups chopped kale
  • Salt and pepper to taste
  • Optional: 1 can cannellini beans, drained and rinsed
  • Optional: 1 teaspoon smoked paprika for extra flavor

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until softened.
  2. Pour in the broth and add diced potatoes and bay leaf. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  3. Remove the bay leaf. Use a potato masher to slightly mash some of the potatoes in the pot for a thicker texture.
  4. Add sliced sausage and kale to the pot. Simmer until the kale is tender and the sausage is heated through, about 10 minutes.
  5. Season with salt, pepper, and optional smoked paprika to taste. Add cannellini beans if desired for extra protein and texture.
  6. Serve hot with crusty bread.

Notes

  • For a vegetarian version, omit the sausage and use vegetable broth.
  • Baby kale can be used for a more tender texture.
  • For a spicier kick, add a pinch of red pepper flakes.
  • Soup tastes even better the next day after flavors have melded.
