Description
A hearty and comforting Portuguese Kale Soup, traditionally known as Caldo Verde, made with kale, potatoes, sausage, and a flavorful broth, with creative twists for added variety.

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 4 medium potatoes, peeled and diced
- 1 bay leaf
- 8 oz chorizo or linguiça sausage, sliced
- 4 cups chopped kale
- Salt and pepper to taste
- Optional: 1 can cannellini beans, drained and rinsed
- Optional: 1 teaspoon smoked paprika for extra flavor
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until softened.
- Pour in the broth and add diced potatoes and bay leaf. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Remove the bay leaf. Use a potato masher to slightly mash some of the potatoes in the pot for a thicker texture.
- Add sliced sausage and kale to the pot. Simmer until the kale is tender and the sausage is heated through, about 10 minutes.
- Season with salt, pepper, and optional smoked paprika to taste. Add cannellini beans if desired for extra protein and texture.
- Serve hot with crusty bread.
Notes
- For a vegetarian version, omit the sausage and use vegetable broth.
- Baby kale can be used for a more tender texture.
- For a spicier kick, add a pinch of red pepper flakes.
- Soup tastes even better the next day after flavors have melded.
