Description

A refreshing twist on the classic Italian dessert, this Best Lemon Tiramisu features layers of lemon-soaked ladyfingers, creamy mascarpone filling, and a light lemon zest topping.

Ingredients

Units Scale
  • 1 cup lemon juice (freshly squeezed)
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 package (7 oz) ladyfinger cookies
  • 16 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • Optional: extra lemon zest or thin lemon slices for garnish

Instructions

  1. In a small saucepan, combine lemon juice, granulated sugar, and water. Heat over medium until sugar dissolves completely, then let it cool. This will be the lemon syrup.
  2. In a mixing bowl, beat heavy cream until stiff peaks form. Set aside.
  3. In another bowl, mix mascarpone cheese, powdered sugar, vanilla extract, and lemon zest until smooth.
  4. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. Quickly dip each ladyfinger into the cooled lemon syrup and arrange a layer in the bottom of a 9×9-inch dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat with another layer of dipped ladyfingers and top with the remaining mascarpone mixture.
  8. Cover and refrigerate for at least 4 hours or overnight to set.
  9. Before serving, garnish with extra lemon zest or thin lemon slices if desired.

Notes

  • Make sure not to soak the ladyfingers too long or they’ll become soggy.
  • This dessert tastes even better after sitting overnight in the fridge.
  • You can substitute limoncello for some of the lemon juice for an adult version.
