Scale
- 1 cup lemon juice (freshly squeezed)
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 package (7 oz) ladyfinger cookies
- 16 oz mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- Optional: extra lemon zest or thin lemon slices for garnish
Instructions
- In a small saucepan, combine lemon juice, granulated sugar, and water. Heat over medium until sugar dissolves completely, then let it cool. This will be the lemon syrup.
- In a mixing bowl, beat heavy cream until stiff peaks form. Set aside.
- In another bowl, mix mascarpone cheese, powdered sugar, vanilla extract, and lemon zest until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Quickly dip each ladyfinger into the cooled lemon syrup and arrange a layer in the bottom of a 9×9-inch dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and top with the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours or overnight to set.
- Before serving, garnish with extra lemon zest or thin lemon slices if desired.
Notes
- Make sure not to soak the ladyfingers too long or they’ll become soggy.
- This dessert tastes even better after sitting overnight in the fridge.
- You can substitute limoncello for some of the lemon juice for an adult version.
