Description

A refreshing twist on the classic Italian dessert, this Lemon Tiramisu combines zesty lemon curd, creamy mascarpone, and soft ladyfingers soaked in limoncello syrup for a light and tangy treat.


Ingredients

  • 1 cup lemon curd
  • 1 cup heavy whipping cream
  • 8 oz mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup limoncello (or lemon juice for non-alcoholic version)
  • 1/2 cup water
  • 24 ladyfinger cookies
  • 1 tbsp lemon zest (plus more for garnish)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. In a mixing bowl, beat the heavy cream until stiff peaks form and set aside.
  2. In another bowl, whisk together the mascarpone cheese, powdered sugar, vanilla extract, and lemon curd until smooth.
  3. Fold the whipped cream into the mascarpone mixture until fully combined.
  4. In a shallow dish, combine the limoncello and water. Dip each ladyfinger briefly into the mixture.
  5. Layer half of the soaked ladyfingers in the bottom of a 9×9 inch dish.
  6. Spread half of the lemon mascarpone mixture over the ladyfingers and smooth the top.
  7. Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  8. Cover and refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, garnish with lemon zest and mint leaves if desired.

Notes

  • You can substitute limoncello with lemon juice for an alcohol-free version.
  • Ensure ladyfingers are dipped quickly to avoid becoming too soggy.
  • Letting the tiramisu chill overnight enhances the flavor and texture.
