- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 2 cups cooked rice
- 1 cup nacho cheese sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/2 cup crushed tortilla chips
- 4 large flour tortillas
- 1 cup shredded Mexican cheese blend (for grilling)
- 1 tbsp butter or oil (for grilling)
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
- Add taco seasoning and 1/2 cup water to the beef. Stir and simmer for 5 minutes.
- Warm the tortillas slightly to make them pliable.
- On each tortilla, layer rice, seasoned beef, nacho cheese sauce, shredded cheddar, sour cream, diced tomatoes, and crushed tortilla chips.
- Roll up the burrito tightly by folding in the sides and rolling it up from the bottom.
- Sprinkle shredded Mexican cheese on one side of each burrito.
- Heat a skillet over medium heat and melt butter or oil.
- Place the cheese-coated side of the burrito down on the skillet and grill until the cheese is golden and crispy, about 2-3 minutes.
- Flip and grill the other side for another 1-2 minutes until heated through.
- Serve warm with extra sour cream or salsa if desired.
Notes
- You can substitute ground beef with ground turkey or plant-based crumbles for a vegetarian version.
- Use pre-cooked rice to save time.
- Add jalapeños or hot sauce for a spicier kick.
