Description

A delicious fusion of a grilled cheese sandwich and a burrito, filled with seasoned beef, rice, cheese, and more, then grilled to golden perfection.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 2 cups cooked rice
  • 1 cup nacho cheese sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/2 cup crushed tortilla chips
  • 4 large flour tortillas
  • 1 cup shredded Mexican cheese blend (for grilling)
  • 1 tbsp butter or oil (for grilling)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  2. Add taco seasoning and 1/2 cup water to the beef. Stir and simmer for 5 minutes.
  3. Warm the tortillas slightly to make them pliable.
  4. On each tortilla, layer rice, seasoned beef, nacho cheese sauce, shredded cheddar, sour cream, diced tomatoes, and crushed tortilla chips.
  5. Roll up the burrito tightly by folding in the sides and rolling it up from the bottom.
  6. Sprinkle shredded Mexican cheese on one side of each burrito.
  7. Heat a skillet over medium heat and melt butter or oil.
  8. Place the cheese-coated side of the burrito down on the skillet and grill until the cheese is golden and crispy, about 2-3 minutes.
  9. Flip and grill the other side for another 1-2 minutes until heated through.
  10. Serve warm with extra sour cream or salsa if desired.

Notes

  • You can substitute ground beef with ground turkey or plant-based crumbles for a vegetarian version.
  • Use pre-cooked rice to save time.
  • Add jalapeños or hot sauce for a spicier kick.
