A delicious and cheesy Taco Bell copycat, the Grilled Cheese Burrito combines beef, rice, nacho cheese, and chipotle sauce wrapped in a warm tortilla with a crispy cheese crust.

- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup cooked rice
- 1/2 cup nacho cheese sauce
- 1/2 cup shredded cheddar cheese (for filling)
- 1/4 cup chipotle sauce
- 1/2 cup sour cream
- 1/2 cup shredded lettuce (optional)
- 1 cup shredded cheddar cheese (for grilling)
- 4 large flour tortillas
- Non-stick cooking spray or butter
Instructions
- Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Simmer for 5 minutes until thickened.
- Warm the flour tortillas in the microwave for 20 seconds to make them pliable.
- Lay a tortilla flat and layer with rice, seasoned beef, nacho cheese sauce, shredded cheese, chipotle sauce, and sour cream. Add lettuce if desired.
- Roll the tortilla into a burrito, tucking in the sides as you go.
- Sprinkle shredded cheese in a hot skillet sprayed with cooking spray or buttered. Place the burrito seam-side down on the cheese.
- Grill until the cheese is golden and crispy, then flip to briefly toast the other side.
- Repeat for all burritos and serve hot.
Notes
- You can use store-bought chipotle sauce or make your own with mayo, chipotle peppers, and lime juice.
- Swap beef for grilled chicken or beans for a vegetarian option.
- Customize with jalapeños or tomatoes for added flavor.
