These French Toast Muffin Cups are a quick and easy twist on classic French toast, baked in a muffin tin for a portable and delicious breakfast option.

- 6 slices of bread, cubed
- 4 large eggs
- 1 cup milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 tbsp butter, melted
- Optional toppings: powdered sugar, fresh berries, extra maple syrup
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
- Add cubed bread to the egg mixture and stir to combine. Let sit for 5 minutes to absorb.
- Spoon the mixture evenly into the prepared muffin tin cups.
- Drizzle melted butter over the top of each muffin cup.
- Bake for 20–25 minutes or until golden brown and set in the center.
- Allow to cool slightly before removing from the muffin tin.
- Serve warm with desired toppings.
Notes
- Use day-old or slightly stale bread for best texture.
- You can prepare the mixture the night before and bake in the morning.
- These muffin cups freeze well for future breakfasts.
