  • 1/2 cup sour cream
  • 3 large apples, peeled, cored, and diced
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon

  • 1 tablespoon butter (for apples)
  • Caramel sauce, for drizzling (optional)
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture firmly into the bottom of the pan. Bake for 10 minutes, then let cool.
  3. In a skillet over medium heat, melt 1 tablespoon butter. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until tender. Let cool slightly.
  4. In a large bowl, beat cream cheese until smooth. Add 1 cup sugar and mix until combined. Add eggs one at a time, beating well. Mix in vanilla and sour cream.
  5. Pour half the cheesecake batter over the crust. Add a layer of the cooked apples. Top with remaining cheesecake batter and gently spread to cover apples.
  6. Bake for 60–70 minutes or until the center is set. Turn off oven and let cheesecake sit inside with door cracked for 1 hour.
  7. Refrigerate cheesecake for at least 4 hours or overnight before serving.
  8. Top with additional apple mixture, caramel sauce, and whipped cream if desired.
