A rich and creamy overnight French toast casserole layered with fresh or frozen mixed berries and a smooth cream cheese filling, perfect for brunch or special occasions.

- 1 loaf brioche or challah bread, cubed
- 8 oz cream cheese, softened
- 6 large eggs
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar (divided)
- 1/4 tsp salt
- 1 1/2 tsp vanilla extract (divided)
- 2 cups mixed berries (fresh or frozen)
- 2 tbsp butter (for greasing dish)
- Powdered sugar, for topping
Instructions
- Grease a 9×13-inch baking dish with butter or nonstick spray.
- Cube the bread and spread half of it evenly in the baking dish.
- Mix softened cream cheese with 1/4 cup of sugar and 1/2 tsp vanilla extract until smooth. Drop spoonfuls over the bread layer.
- Sprinkle half the mixed berries over the cream cheese layer.
- Top with the remaining bread cubes and the rest of the berries.
- In a large bowl, whisk together eggs, milk, heavy cream, remaining 1/4 cup sugar, 1 tsp vanilla extract, and a pinch of salt until well combined.
- Pour the egg mixture evenly over the layered bread and berries, pressing lightly to help the bread soak.
- Cover and refrigerate overnight (at least 6 hours).
- Preheat oven to 350°F (175°C). Remove the dish from the refrigerator while the oven heats.
- Bake uncovered for 45-50 minutes, or until golden brown and set in the center.
- Let rest for 10 minutes. Dust with powdered sugar and serve with syrup or extra berries if desired.
