Description

A rich and creamy overnight French toast casserole layered with fresh or frozen mixed berries and a smooth cream cheese filling, perfect for brunch or special occasions.


Ingredients

  • 1 loaf brioche or challah bread, cubed
  • 8 oz cream cheese, softened
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar (divided)
  • 1/4 tsp salt
  • 1 1/2 tsp vanilla extract (divided)
  • 2 cups mixed berries (fresh or frozen)
  • 2 tbsp butter (for greasing dish)
  • Powdered sugar, for topping

Instructions

  1. Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Cube the bread and spread half of it evenly in the baking dish.
  3. Mix softened cream cheese with 1/4 cup of sugar and 1/2 tsp vanilla extract until smooth. Drop spoonfuls over the bread layer.
  4. Sprinkle half the mixed berries over the cream cheese layer.
  5. Top with the remaining bread cubes and the rest of the berries.
  6. In a large bowl, whisk together eggs, milk, heavy cream, remaining 1/4 cup sugar, 1 tsp vanilla extract, and a pinch of salt until well combined.
  7. Pour the egg mixture evenly over the layered bread and berries, pressing lightly to help the bread soak.
  8. Cover and refrigerate overnight (at least 6 hours).
  9. Preheat oven to 350°F (175°C). Remove the dish from the refrigerator while the oven heats.
  10. Bake uncovered for 45-50 minutes, or until golden brown and set in the center.
  11. Let rest for 10 minutes. Dust with powdered sugar and serve with syrup or extra berries if desired.
