Description

Beefaroni is a comforting, hearty pasta dish made with ground beef, tomato sauce, and elbow macaroni. It’s a quick and easy one-pot meal perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups elbow macaroni, uncooked
  • 2 cups water or beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)


Instructions

  1. In a large skillet or pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add diced onion and minced garlic to the pan. Sauté for 2-3 minutes until softened.
  3. Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper.
  4. Add uncooked elbow macaroni and water or beef broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 12-15 minutes, or until pasta is tender, stirring occasionally.
  6. If desired, stir in shredded cheddar cheese until melted and well combined.
  7. Remove from heat and let sit for a few minutes before serving.

Notes

  • Use ground turkey or chicken as a leaner alternative to beef.
  • For extra veggies, add bell peppers or spinach when sautéing the onion.
  • Cheese can be omitted for a dairy-free version.
