- 1 1/2 pounds beef stew meat or sirloin tips, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Cooked white rice, for serving
- Fresh parsley, chopped (optional for garnish)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add beef tips and sear on all sides until browned. Remove from skillet and set aside.
- In the same skillet, sauté onion until soft, about 4-5 minutes. Add garlic and cook for 1 minute more.
- Return the beef to the skillet. Add beef broth, Worcestershire sauce, soy sauce, thyme, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1 to 1.5 hours, or until beef is tender.
- In a small bowl, mix cornstarch and cold water until smooth. Stir into the beef mixture and cook until the gravy thickens, about 3-5 minutes.
- Serve hot over cooked white rice and garnish with parsley if desired.
Notes
- Use a tougher cut like chuck for slow simmering, or sirloin for a quicker cook.
- For added richness, stir in a tablespoon of butter at the end.
- Leftovers store well and taste even better the next day.
