- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/4 cup water
- 1 cup cooked Mexican rice
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/2 cup shredded lettuce
- 1 medium tomato, diced
- 6 large flour tortillas
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened.
- Add garlic and cook for 1 minute, then add ground beef. Cook until browned and crumbled, about 7–10 minutes.
- Drain excess fat. Stir in taco seasoning and 1/4 cup water. Simmer for 2–3 minutes until thickened.
- Warm tortillas in a microwave or skillet.
- To assemble each burrito, place a layer of Mexican rice, seasoned beef, black beans, cheese, salsa, sour cream, lettuce, and tomatoes in the center of a tortilla.
- Fold in the sides and roll tightly into a burrito.
- Optional: Toast the burrito seam-side down in a dry skillet for a crispy finish.
- Serve warm with extra salsa or guacamole if desired.

- You can substitute ground turkey or chicken for a lighter version.
- Use store-bought or homemade Mexican rice for convenience.
