Description

Beef and Bean Burritos are hearty and satisfying, filled with seasoned ground beef, refried beans, and melted cheese, all wrapped in a warm tortilla for a quick and delicious meal.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil (optional)
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas
  • Optional toppings: sour cream, salsa, lettuce, tomatoes, guacamole

Instructions

  1. In a skillet over medium heat, heat olive oil if using. Add onion and cook for 2–3 minutes until softened. Add garlic and cook 1 minute more.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
  4. Warm refried beans in a separate pot or microwave.
  5. Warm tortillas in a dry skillet or microwave to make them pliable.
  6. To assemble burritos, spread a layer of refried beans on each tortilla, add seasoned beef, sprinkle with cheese, and any desired toppings.
  7. Roll up burritos by folding in the sides and rolling tightly from the bottom up.
  8. Optional: Toast in a skillet or bake seam-side down at 375°F (190°C) for 8–10 minutes to crisp.

Notes

  • Use canned black beans or whole pinto beans as an alternative to refried beans.
  • Make ahead and freeze for an easy grab-and-go meal.
  • Add rice or sautéed peppers for extra bulk and flavor.
