Beef and Bean Burritos are hearty and satisfying, filled with seasoned ground beef, refried beans, and melted cheese, all wrapped in a warm tortilla for a quick and delicious meal.

- 1 pound ground beef
- 1 tablespoon olive oil (optional)
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1/4 cup water
- 1 can (15 oz) refried beans
- 1 cup shredded cheddar or Mexican blend cheese
- 6 large flour tortillas
- Optional toppings: sour cream, salsa, lettuce, tomatoes, guacamole
Instructions
- In a skillet over medium heat, heat olive oil if using. Add onion and cook for 2–3 minutes until softened. Add garlic and cook 1 minute more.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
- Warm refried beans in a separate pot or microwave.
- Warm tortillas in a dry skillet or microwave to make them pliable.
- To assemble burritos, spread a layer of refried beans on each tortilla, add seasoned beef, sprinkle with cheese, and any desired toppings.
- Roll up burritos by folding in the sides and rolling tightly from the bottom up.
- Optional: Toast in a skillet or bake seam-side down at 375°F (190°C) for 8–10 minutes to crisp.
Notes
- Use canned black beans or whole pinto beans as an alternative to refried beans.
- Make ahead and freeze for an easy grab-and-go meal.
- Add rice or sautéed peppers for extra bulk and flavor.
