Description

These crispy, cheesy bean taquitos are an easy and delicious meal or snack. They’re packed with creamy refried beans and melted cheese, rolled in tortillas, and baked or air-fried to golden perfection. Great for meal prep, freezer-friendly, and kid-approved!


Ingredients

  • 1 can (15 oz) refried beans

  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • 1/4 teaspoon chili powder (optional)

  • 8-10 small flour or corn tortillas

  • Cooking spray or a little oil (for brushing)

  • Salt to taste


Instructions

  1. Preheat oven to 425°F or preheat air fryer to 400°F.

  2. In a mixing bowl, combine refried beans, cheddar cheese, Monterey Jack cheese, garlic powder, cumin, and chili powder. Mix well.

  3. Warm tortillas slightly in the microwave to make them easier to roll (about 20 seconds covered with a damp paper towel).

  4. Spoon 2–3 tablespoons of the bean mixture down the center of each tortilla. Roll tightly and place seam-side down on a baking sheet or in the air fryer basket.

  5. Lightly spray or brush the tops with oil.

  6. Oven method: Bake for 15–20 minutes, flipping halfway through, until golden and crispy.
    Air fryer method: Air fry for 7–9 minutes, flipping once, until crisp.

  7. Let cool slightly before serving. Serve with salsa, sour cream, or guacamole.


Notes

  • Use corn tortillas for a gluten-free option.

  • Add a spoonful of salsa or diced green chiles to the filling for extra flavor.

  • To freeze, assemble the taquitos and freeze before baking or air frying. Cook directly from frozen, adding a few extra minutes.
