Ingredients
-
1 can (15 oz) refried beans
-
1 cup shredded cheddar cheese
-
1 cup shredded Monterey Jack cheese
-
1/2 teaspoon garlic powder
-
1/2 teaspoon cumin
-
1/4 teaspoon chili powder (optional)
-
8-10 small flour or corn tortillas
-
Cooking spray or a little oil (for brushing)
-
Salt to taste
Instructions
-
Preheat oven to 425°F or preheat air fryer to 400°F.
-
In a mixing bowl, combine refried beans, cheddar cheese, Monterey Jack cheese, garlic powder, cumin, and chili powder. Mix well.
-
Warm tortillas slightly in the microwave to make them easier to roll (about 20 seconds covered with a damp paper towel).
-
Spoon 2–3 tablespoons of the bean mixture down the center of each tortilla. Roll tightly and place seam-side down on a baking sheet or in the air fryer basket.
-
Lightly spray or brush the tops with oil.
-
Oven method: Bake for 15–20 minutes, flipping halfway through, until golden and crispy.
Air fryer method: Air fry for 7–9 minutes, flipping once, until crisp. -
Let cool slightly before serving. Serve with salsa, sour cream, or guacamole.
Notes
-
Use corn tortillas for a gluten-free option.
-
Add a spoonful of salsa or diced green chiles to the filling for extra flavor.
-
To freeze, assemble the taquitos and freeze before baking or air frying. Cook directly from frozen, adding a few extra minutes.
