These BBQ Pineapple Chicken Kabobs are juicy, sweet, and smoky — perfect for grilling season! Chunks of tender chicken are marinated in a tangy BBQ sauce, then skewered with fresh pineapple, bell peppers, and red onions. It’s an easy, crowd-pleasing meal that’s great for cookouts, weeknight dinners, or summer parties.
Ingredients

1 1/2 lbs boneless, skinless chicken breasts, cut into 1.5-inch chunks

1 1/2 cups fresh pineapple chunks

1 red bell pepper, cut into 1.5-inch pieces

1 green bell pepper, cut into 1.5-inch pieces

1 red onion, cut into wedges

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon olive oil

Salt and pepper, to taste

Wooden or metal skewers
Instructions

Prep the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Marinate the chicken: In a large bowl, mix BBQ sauce, olive oil, salt, and pepper. Add chicken chunks and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).

Assemble the kabobs: Thread marinated chicken, pineapple, bell peppers, and red onion onto skewers, alternating ingredients.

Preheat grill: Heat grill to medium-high heat. Lightly oil the grates.

Grill the kabobs: Place kabobs on the grill and cook for about 10–12 minutes, turning every few minutes. Brush with extra BBQ sauce while grilling, until chicken is cooked through and has nice grill marks.

Serve: Remove from grill and let rest for a couple of minutes. Serve warm with extra BBQ sauce on the side, if desired.
