Ingredients
Sweet Potatoes:
2 large sweet potatoes, peeled and diced;
Seasoning:
2 tablespoons olive oil, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, ½ teaspoon salt, ¼ teaspoon black pepper;
Chicken:
1½ pounds boneless, skinless chicken breasts, ½ cup barbecue sauce;
Additional:
1 cup cooked brown rice or quinoa, 1 cup canned black beans, drained and rinsed, 1 cup corn kernels, 1 avocado, sliced, ¼ cup chopped fresh cilantro, lime wedges for serving.
Instructions
