Description

A flavorful and healthy BBQ Cauliflower Bites Bowl packed with roasted cauliflower, fresh vegetables, and a tangy BBQ sauce. Perfect for a satisfying plant-based meal.


Ingredients

  • 1 head cauliflower, cut into florets
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1 cup BBQ sauce (vegan)
  • 1 cup cooked brown rice or quinoa
  • 1/2 cup shredded red cabbage
  • 1/2 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 2 tbsp chopped green onions
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with olive oil, garlic powder, smoked paprika, and salt until evenly coated.
  3. Spread the cauliflower on the baking sheet and roast for 25 minutes, flipping halfway through.
  4. Remove from oven and toss with BBQ sauce. Return to oven for another 10 minutes.
  5. While cauliflower is roasting, prepare the bowl ingredients: cook rice or quinoa, slice avocado, chop cabbage and tomatoes.
  6. Assemble bowls with a base of rice or quinoa, top with BBQ cauliflower, red cabbage, cherry tomatoes, avocado slices, green onions, and sesame seeds.
  7. Drizzle with extra BBQ sauce if desired and serve warm.

Notes

  • Use your favorite BBQ sauce; make sure it’s vegan if needed.
  • For added crunch, include roasted chickpeas or crushed nuts.
  • Leftovers can be stored in the fridge for up to 3 days.
