A flavorful and healthy BBQ Cauliflower Bites Bowl packed with roasted cauliflower, fresh vegetables, and a tangy BBQ sauce. Perfect for a satisfying plant-based meal.

- 1 head cauliflower, cut into florets
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1 cup BBQ sauce (vegan)
- 1 cup cooked brown rice or quinoa
- 1/2 cup shredded red cabbage
- 1/2 cup cherry tomatoes, halved
- 1 avocado, sliced
- 2 tbsp chopped green onions
- 1 tbsp sesame seeds (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss cauliflower florets with olive oil, garlic powder, smoked paprika, and salt until evenly coated.
- Spread the cauliflower on the baking sheet and roast for 25 minutes, flipping halfway through.
- Remove from oven and toss with BBQ sauce. Return to oven for another 10 minutes.
- While cauliflower is roasting, prepare the bowl ingredients: cook rice or quinoa, slice avocado, chop cabbage and tomatoes.
- Assemble bowls with a base of rice or quinoa, top with BBQ cauliflower, red cabbage, cherry tomatoes, avocado slices, green onions, and sesame seeds.
- Drizzle with extra BBQ sauce if desired and serve warm.
Notes
- Use your favorite BBQ sauce; make sure it’s vegan if needed.
- For added crunch, include roasted chickpeas or crushed nuts.
- Leftovers can be stored in the fridge for up to 3 days.
