- 1 medium head cauliflower, cut into florets
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1 cup BBQ sauce
- 1 cup cooked brown rice
- 1/2 cup shredded carrots
- 1/2 cup shredded red cabbage
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup vegan ranch or tahini dressing (optional)
- 1 tbsp olive oil (for baking sheet)
Instructions
- Preheat the oven to 425°F (220°C) and lightly grease a baking sheet with olive oil.
- In a bowl, whisk together flour, water, garlic powder, smoked paprika, and salt until smooth.
- Dip each cauliflower floret into the batter, shaking off excess, then place on the baking sheet.
- Bake for 20 minutes, flipping halfway through.
- Remove from oven and toss cauliflower with BBQ sauce. Return to oven for another 10-15 minutes until crispy and glazed.
- Assemble the bowls by adding cooked rice, BBQ cauliflower, shredded carrots, cabbage, green onions, and cilantro.
- Drizzle with vegan ranch or tahini dressing, if desired, and serve warm.
Notes
- You can use store-bought or homemade BBQ sauce.
- Swap brown rice for quinoa or cauliflower rice for a low-carb option.
- Leftover BBQ cauliflower can be stored in the fridge for up to 3 days.
