Description

A flavorful and healthy BBQ Cauliflower Bites Bowl featuring crispy cauliflower tossed in tangy BBQ sauce, served over rice with fresh veggies and a creamy dressing.


Ingredients

  • 1 medium head cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1 cup BBQ sauce
  • 1 cup cooked brown rice
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup vegan ranch or tahini dressing (optional)
  • 1 tbsp olive oil (for baking sheet)

Instructions

  1. Preheat the oven to 425°F (220°C) and lightly grease a baking sheet with olive oil.
  2. In a bowl, whisk together flour, water, garlic powder, smoked paprika, and salt until smooth.
  3. Dip each cauliflower floret into the batter, shaking off excess, then place on the baking sheet.
  4. Bake for 20 minutes, flipping halfway through.
  5. Remove from oven and toss cauliflower with BBQ sauce. Return to oven for another 10-15 minutes until crispy and glazed.
  6. Assemble the bowls by adding cooked rice, BBQ cauliflower, shredded carrots, cabbage, green onions, and cilantro.
  7. Drizzle with vegan ranch or tahini dressing, if desired, and serve warm.

Notes

  • You can use store-bought or homemade BBQ sauce.
  • Swap brown rice for quinoa or cauliflower rice for a low-carb option.
  • Leftover BBQ cauliflower can be stored in the fridge for up to 3 days.
