Description
A hearty and flavorful casserole combining BBQ-seasoned ground beef, beans, corn, and crispy tater tots, all topped with melted cheese for a comforting, crowd-pleasing meal.
Ingredients
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 small yellow onion, chopped
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 can (15 oz) sloppy joe sauce or BBQ sauce
- 1 can (15 oz) baked beans, drained
- 1 can (15 oz) corn, drained
- 1 tsp yellow mustard
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 bag (30-32 oz) frozen tater tots
- 2 cups shredded cheddar cheese, divided
- 2 tbsp sliced green onions, for garnish (optional)
Instructions
- Preheat oven to 375°F. Spray a 9×13 inch baking dish with nonstick spray.
- Heat olive oil in a skillet over medium-high heat. Add ground beef and onion, season with salt and pepper, and cook until browned. Drain excess fat.
- Stir in sloppy joe or BBQ sauce, beans, corn, mustard, garlic powder, chili powder, and cumin. Simmer for 10 minutes.
- Spread beef mixture in prepared baking dish. Sprinkle 1 cup cheddar cheese over the top.
- Layer tater tots evenly over the cheese. Sprinkle remaining 1 cup cheese on top.
- Bake for 30-35 minutes until tater tots are golden brown and casserole is bubbly.
- Let cool slightly, garnish with green onions if desired, and serve.
Notes
- Substitute baked beans with black or pinto beans for a different twist.
- Use spicy BBQ sauce for a kick.
- Can be assembled ahead and refrigerated before baking.
- Leftovers reheat well in oven or microwave.
