Description

These Bang Bang Chicken Skewers are juicy grilled chicken pieces coated in a spicy, creamy, and slightly sweet sauce. Perfect for parties, barbecues, or a flavorful weeknight dinner.


Ingredients

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Wooden or metal skewers
  • Chopped green onions (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using.
  2. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, garlic powder, salt, and pepper to make the Bang Bang sauce.
  3. Reserve half of the sauce for serving and use the rest for marinating.
  4. Toss chicken cubes in the marinade and refrigerate for at least 30 minutes.
  5. Preheat grill or grill pan to medium-high heat and lightly oil the grates.
  6. Thread marinated chicken onto skewers.
  7. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  8. Brush with reserved sauce during the last few minutes of grilling.
  9. Remove from grill, garnish with green onions and sesame seeds, and serve hot.

Notes

  • Adjust the level of sriracha for more or less spice.
  • Use chicken thighs for juicier meat if preferred.
  • Can also be baked in the oven at 425°F (220°C) for 20-25 minutes.
  • Serve with rice, noodles, or a fresh salad.
