- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 ripe bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix mashed bananas, sugar, egg, melted butter, and vanilla extract until well combined.
- Stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Spoon batter into prepared muffin cups, filling each about 2/3 full.
- Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for best flavor and sweetness.
- Add nuts or chocolate chips for extra texture and flavor.
- Store in an airtight container for up to 3 days or freeze for longer storage.
