- 3 ripe bananas, mashed (about 1 1/2 cups)
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon (optional)
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup milk or buttermilk
- 1/2–1 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper if desired.
- In a large bowl, mash the bananas until smooth.
- Whisk in melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and milk or buttermilk until well combined.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon if using.
- Gently fold dry ingredients into the wet ingredients until just combined. Do not overmix.
- Fold in chopped nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For added flavor, swirl Nutella or peanut butter into the batter before baking.
- Top with streusel crumble for extra sweetness and crunch.
- Make muffins instead: divide batter into a lined muffin tin and bake for 20–22 minutes.
