Description

Creamy Baked Tuscan Chicken Breasts are a flavorful and comforting dish made with seared chicken in a garlic cream sauce with sun-dried tomatoes and spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic for 1 minute.
  5. Add heavy cream and chicken broth. Bring to a simmer.
  6. Stir in Parmesan cheese and sun-dried tomatoes. Simmer for 2-3 minutes.
  7. Add spinach and cook until wilted. If needed, mix cornstarch with a tablespoon of water and add to thicken sauce.
  8. Return chicken to the skillet and spoon sauce over the top.
  9. Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
  10. Remove from oven, let rest for 5 minutes before serving.

Notes

  • Use thin chicken breasts or pound them to even thickness for quicker, more even cooking.
  • Add mushrooms or artichokes for extra flavor.
  • Serve with pasta, rice, or crusty bread to soak up the sauce.
