- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1 teaspoon cornstarch (optional, for thickening)
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- In an oven-safe skillet, heat olive oil over medium-high heat. Sear chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute.
- Add heavy cream and chicken broth. Bring to a simmer.
- Stir in Parmesan cheese and sun-dried tomatoes. Simmer for 2-3 minutes.
- Add spinach and cook until wilted. If needed, mix cornstarch with a tablespoon of water and add to thicken sauce.
- Return chicken to the skillet and spoon sauce over the top.
- Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
- Remove from oven, let rest for 5 minutes before serving.
Notes
- Use thin chicken breasts or pound them to even thickness for quicker, more even cooking.
- Add mushrooms or artichokes for extra flavor.
- Serve with pasta, rice, or crusty bread to soak up the sauce.
