- 1 tablespoon cornstarch

Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel and cut sweet potatoes into evenly sized thin fries or matchsticks.
- Soak fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry thoroughly.
- Toss the fries in a large bowl with cornstarch until lightly coated.
- Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and pepper. Toss to evenly coat.
- Spread fries in a single layer on the baking sheet, ensuring they don’t touch.
- Bake for 15 minutes, flip, then bake for another 10-15 minutes until crispy and golden brown.
- Let cool slightly before serving with your favorite dipping sauce.
