A creamy, tangy, and savory pasta dish made with roasted feta cheese, cherry tomatoes, and garlic, all combined into a luscious sauce that coats your favorite pasta.
Ingredients

- 2 cups cherry tomatoes
- 1 small block of feta cheese (about 7 oz)
- 4 garlic cloves, whole and peeled
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1/2 tsp chili flakes (optional)
- Salt and black pepper to taste
- 10 oz pasta of choice (penne, rigatoni, or fusilli)
- 1/4 cup fresh basil, torn
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, toss cherry tomatoes and garlic cloves with olive oil, salt, pepper, oregano, and chili flakes if using.
- Place the feta block in the center of the dish and drizzle with a little extra olive oil.
- Bake uncovered for 30-35 minutes, until tomatoes burst and feta is golden and soft.
- Meanwhile, cook pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water before draining.
- Remove baking dish from the oven and mash feta and tomatoes together to form a creamy sauce.
- Add cooked pasta and a splash of reserved pasta water to the dish. Stir until everything is well combined.
- Finish with torn basil and serve immediately.
Notes
- Add spinach or arugula after mixing for extra greens.
- Stir in cooked chicken or shrimp for added protein.
- Use vegan feta for a dairy-free version.
- Mix in olives or capers for a briny touch.
- Sun-dried tomatoes add extra flavor depth.
