Description

A creamy, tangy, and savory pasta dish made with roasted feta cheese, cherry tomatoes, and garlic, all combined into a luscious sauce that coats your favorite pasta.


Ingredients

Scale
  • 2 cups cherry tomatoes
  • 1 small block of feta cheese (about 7 oz)
  • 4 garlic cloves, whole and peeled
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp chili flakes (optional)
  • Salt and black pepper to taste
  • 10 oz pasta of choice (penne, rigatoni, or fusilli)
  • 1/4 cup fresh basil, torn

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, toss cherry tomatoes and garlic cloves with olive oil, salt, pepper, oregano, and chili flakes if using.
  3. Place the feta block in the center of the dish and drizzle with a little extra olive oil.
  4. Bake uncovered for 30-35 minutes, until tomatoes burst and feta is golden and soft.
  5. Meanwhile, cook pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water before draining.
  6. Remove baking dish from the oven and mash feta and tomatoes together to form a creamy sauce.
  7. Add cooked pasta and a splash of reserved pasta water to the dish. Stir until everything is well combined.
  8. Finish with torn basil and serve immediately.

Notes

  • Add spinach or arugula after mixing for extra greens.
  • Stir in cooked chicken or shrimp for added protein.
  • Use vegan feta for a dairy-free version.
  • Mix in olives or capers for a briny touch.
  • Sun-dried tomatoes add extra flavor depth.
