Description

A creamy, tangy, and savory pasta dish made by baking a block of feta cheese with cherry tomatoes, then mixing it with cooked pasta and fresh basil.


Ingredients

  • 1 block (200g) feta cheese
  • 450g cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 300g pasta (penne or fusilli recommended)
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil leaves, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the cherry tomatoes and the block of feta cheese in a baking dish.
  3. Drizzle with olive oil, add minced garlic, and season with salt, pepper, and red pepper flakes if using.
  4. Bake in the oven for 30-35 minutes until the tomatoes burst and the feta is soft and golden.
  5. While baking, cook the pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
  6. Remove the baking dish from the oven and mash the feta and tomatoes with a fork until well combined.
  7. Add the cooked pasta and a splash of reserved pasta water if needed to loosen the sauce.
  8. Stir to coat the pasta evenly with the feta-tomato sauce.
  9. Garnish with fresh chopped basil and serve warm.
