- 1 block (200g) feta cheese
- 450g cherry tomatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- 300g pasta (penne or fusilli recommended)
- 1/2 teaspoon red pepper flakes (optional)
- Fresh basil leaves, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the cherry tomatoes and the block of feta cheese in a baking dish.
- Drizzle with olive oil, add minced garlic, and season with salt, pepper, and red pepper flakes if using.
- Bake in the oven for 30-35 minutes until the tomatoes burst and the feta is soft and golden.
- While baking, cook the pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
- Remove the baking dish from the oven and mash the feta and tomatoes with a fork until well combined.
- Add the cooked pasta and a splash of reserved pasta water if needed to loosen the sauce.
- Stir to coat the pasta evenly with the feta-tomato sauce.
- Garnish with fresh chopped basil and serve warm.
