- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 cup buttermilk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups cornflakes, crushed
- 1/2 cup breadcrumbs
- 2 tbsp olive oil or melted butter
- 1/3 cup honey
- 2–3 tsp hot sauce (like Frank’s RedHot)
- 1 tsp red pepper flakes (optional, for extra heat)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or a wire rack.
- In a bowl, mix buttermilk with garlic powder, onion powder, smoked paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes, or overnight for best flavor.
- In another bowl, combine crushed cornflakes, breadcrumbs, and olive oil or melted butter.
- Remove chicken from marinade and coat each piece in the cornflake mixture, pressing to adhere.
- Place coated chicken on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and cooked through (internal temp 165°F).
- While chicken bakes, heat honey and hot sauce in a small saucepan over low heat until warm and well combined.
- Drizzle hot honey over the baked chicken right before serving. Garnish with red pepper flakes if desired.

- Marinate chicken overnight for deeper flavor.
- Use panko breadcrumbs for extra crunch if preferred.
- Adjust the hot sauce level to your spice preference.
