Description

A classic Italian-American dish made healthier by baking instead of frying. Juicy chicken breasts are coated in breadcrumbs, baked until crispy, and topped with marinara sauce and melted mozzarella and Parmesan cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with olive oil.
  2. Slice each chicken breast in half lengthwise to create 4 thinner cutlets. Season with salt and pepper.
  3. Set up a breading station with three shallow bowls: flour in the first, beaten eggs in the second, and a mix of breadcrumbs and Parmesan in the third.
  4. Dredge each chicken cutlet in flour, dip into eggs, then coat with breadcrumb mixture.
  5. Place the breaded chicken on the prepared baking sheet and drizzle lightly with olive oil.
  6. Bake for 20 minutes, flipping halfway through, until golden and cooked through.
  7. Remove from oven, spoon marinara sauce over each piece, and sprinkle with mozzarella cheese.
  8. Return to oven and bake for another 5-7 minutes, or until cheese is melted and bubbly.
  9. Garnish with fresh basil if desired and serve hot.

Notes

  • Use freshly grated Parmesan for the best flavor.
  • Chicken can be pounded for even thickness and faster cooking.
  • Serve over spaghetti or with a side salad for a complete meal.
