Ingredients
- 8 chicken drumsticks
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- In a bowl, whisk together olive oil, soy sauce, lemon juice, mustard, honey, garlic, paprika, oregano, thyme, pepper, and salt to make the marinade.
- Place chicken legs in a large resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Arrange marinated chicken legs on the rack and discard leftover marinade.
- Bake for 35–45 minutes, flipping once halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and browned.
- Let rest for 5 minutes before serving.
