A flavorful and healthy dish featuring spicy blackened salmon fillets baked to perfection, topped with a refreshing mango avocado salsa.

- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 ripe mango, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, seeded and minced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper.
- Rub each salmon fillet with olive oil and coat evenly with the spice mixture.
- Place the salmon fillets on the prepared baking sheet and bake for 12-15 minutes or until cooked through.
- While the salmon bakes, combine diced mango, avocado, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Mix gently.
- Remove the salmon from the oven and let rest for a few minutes.
- Top each salmon fillet with a generous spoonful of mango avocado salsa and serve immediately.
Notes
- For extra heat, add more jalapeño to the salsa.
- Salmon can be grilled instead of baked if desired.
- Salsa can be made ahead of time and stored in the fridge for up to 2 hours.
