Description

A flavorful and healthy dish featuring spicy blackened salmon fillets baked to perfection, topped with a refreshing mango avocado salsa.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper.
  3. Rub each salmon fillet with olive oil and coat evenly with the spice mixture.
  4. Place the salmon fillets on the prepared baking sheet and bake for 12-15 minutes or until cooked through.
  5. While the salmon bakes, combine diced mango, avocado, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Mix gently.
  6. Remove the salmon from the oven and let rest for a few minutes.
  7. Top each salmon fillet with a generous spoonful of mango avocado salsa and serve immediately.

Notes

  • For extra heat, add more jalapeño to the salsa.
  • Salmon can be grilled instead of baked if desired.
  • Salsa can be made ahead of time and stored in the fridge for up to 2 hours.
