- 1/2 lb cooked shrimp, peeled, deveined, and chopped
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, quartered
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and finely chopped
- 2 tablespoons fresh cilantro, chopped
- 3 tablespoons fresh lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine chopped shrimp, avocados, tomatoes, red onion, jalapeño, and cilantro.
- Drizzle with lime juice and olive oil.
- Season with salt and pepper to taste.
- Gently toss to mix, being careful not to mash the avocado.
- Serve immediately with tortilla chips or chill for 15–20 minutes before serving.
Notes
- Use pre-cooked shrimp for convenience, or cook and chill your own.
- Adjust jalapeño quantity for desired spice level.
