Description

Authentic Carne Asada is marinated grilled beef, typically flank or skirt steak, bursting with bold, zesty flavors. Served as street tacos, it’s tucked into warm corn tortillas and topped with fresh, simple ingredients.


Ingredients

  • 2 lbs flank or skirt steak
  • 1/3 cup orange juice
  • 1/4 cup lime juice (about 2 limes)
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 1 jalapeño, seeded and chopped
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas, for serving
  • Chopped onion, cilantro, lime wedges, and salsa, for topping

Instructions

  1. In a large bowl or zip-top bag, whisk together orange juice, lime juice, soy sauce, olive oil, garlic, jalapeño, cilantro, cumin, chili powder, salt, and pepper.
  2. Add the steak and marinate in the refrigerator for at least 2 hours, preferably overnight.
  3. Preheat grill or grill pan over high heat. Remove steak from marinade and grill 5–7 minutes per side, depending on thickness and desired doneness.
  4. Transfer to a cutting board, cover loosely with foil, and let rest for 5–10 minutes.
  5. Slice steak thinly against the grain, then chop into bite-sized pieces.
  6. Warm corn tortillas on the grill or a hot skillet.
  7. Assemble tacos by adding carne asada to each tortilla and topping with chopped onion, cilantro, and a squeeze of lime. Serve with salsa if desired.

Notes

  • Skirt steak is traditional and cooks quickly, but flank steak is a great substitute.
  • Don’t skip resting the meat—it keeps it juicy and tender.
  • Make it a taco bar with a variety of toppings like avocado, radishes, or queso fresco.
