For the Marinated Chicken:

  • 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3/4 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon salt

For the Sauce:

  • 3 tablespoons unsalted butter
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 1 1/2 teaspoons ginger-garlic paste
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 1/2 cups tomato puree
  • 1 cup heavy cream
  • 1 teaspoon garam masala
  • 1 tablespoon sugar (optional)
  • fresh cilantro for garnish

Instructions

  1. Marinate the Chicken: In a bowl, mix yogurt, lemon juice, ginger-garlic paste, turmeric, cumin, garam masala, chili powder, and salt. Add chicken, coat well, cover, and refrigerate for at least 1 hour.
  2. Cook the Chicken: Sear marinated chicken in butter and oil until browned. Set aside.
  3. Prepare the Sauce: In the same skillet, cook onion, spices, and tomato puree. Add cream, garam masala, and sugar. Simmer, then add chicken back to the pan.
  4. Serve: Garnish with cilantro and enjoy hot with naan or rice.
