- 2 cups cooked chicken breast, shredded
- 4 cups romaine lettuce, chopped
- 2 cups red cabbage, shredded
- 1 cup carrots, julienned
- 1 red bell pepper, thinly sliced
- 1/4 cup green onions, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup sliced almonds, toasted
- 1 tablespoon sesame seeds
- 1/4 cup crunchy chow mein noodles (optional)
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 tablespoon fresh ginger, grated
- 1 garlic clove, minced
- 2 tablespoons olive oil
Instructions
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, grated ginger, garlic, and olive oil to make the dressing. Set aside.
- In a large bowl, combine chicken, romaine lettuce, red cabbage, carrots, bell pepper, green onions, and cilantro.
- Pour the ginger dressing over the salad and toss well to coat.
- Top with toasted almonds, sesame seeds, and optional chow mein noodles.
- Serve immediately for best crunch and flavor.
