Description

A refreshing and flavorful Asian Chicken Salad tossed with a zesty ginger dressing, perfect for a light and healthy meal.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 4 cups romaine lettuce, chopped
  • 2 cups red cabbage, shredded
  • 1 cup carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1/4 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup sliced almonds, toasted
  • 1 tablespoon sesame seeds
  • 1/4 cup crunchy chow mein noodles (optional)
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, grated
  • 1 garlic clove, minced
  • 2 tablespoons olive oil

Instructions

  1. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, grated ginger, garlic, and olive oil to make the dressing. Set aside.
  2. In a large bowl, combine chicken, romaine lettuce, red cabbage, carrots, bell pepper, green onions, and cilantro.
  3. Pour the ginger dressing over the salad and toss well to coat.
  4. Top with toasted almonds, sesame seeds, and optional chow mein noodles.
  5. Serve immediately for best crunch and flavor.

Notes

  • You can substitute chicken with tofu for a vegetarian version.
  • Make the dressing ahead of time for enhanced flavor.
